Comfort Baking Co. Chocolate Raspberry Cookie Dough

With the holidays upon us, it can be a life-saver to have our repertoire of sweets and treats well practiced, and for those times we don’t have the time to measure and mix before we bake, it can be more than handy to have some ready-to-bake offerings on hand.

Enter Comfort Baking Co., a local Seattle frozen cookie dough operation in lower Queen Anne. Comfort Baking Co. offers three flagship frozen cookie doughs that are as easy to prepare as they are delicious—lemon lavender shortbread, chocolate raspberry, and Kitchen Sink.

As their names suggest, lemon lavender shortbread is a classic-style shortbread dough with lavender flowers and lemon zest, chocolate raspberry is a deeply rich chocolate dough with chocolate chunks and dried raspberries, and Kitchen Sink is also a chocolate dough replete with hazelnuts, tart cherries, toasted coconut, oatmeal, and chocolate chips—everything but the kitchen sink!

Comfort Baking Co.’s cofounders, Max and JD, inherited their recipes from Max’s mother, Marcia, and nothing shows your mom you love her cookies by making them famous.

Preparation of cookies from Comfort Baking Co.’s three frozen doughs could not be faster or easier, making them the perfect go-to for any situation, from that Wednesday office Christmas party Lacey in sales emailed you about on Tuesday to cocoa and schnapps with friends and family to a quiet evening curled up with a blanket and a good book.

The three doughs for Comfort Baking Co.’s cookies come pre-portioned and pre-formed, so prep is as simple as preheating your oven to 350° and arranging the dough on a baking sheet, over which you have placed the included sheet of parchment paper.

Depending on your oven, bake time will only ever be as long as twenty minutes, so you will only have enough time to watch that next episode of your favorite sitcom if you include time for cooling (recommended!).

The cookies come out looking much the same as the dough did going in, but your kitchen will now be full of the mouthwatering fragrance of fresh cookies, and it might be a challenge to allow that recommended cooling time before diving in.

And when you and your friends, family, or coworkers do take your first bites, try not to be too shocked at the level of overlapping flavors.

Comfort Baking Co.’s chocolate raspberry cookies, for example, lead with a full barrage of chocolate punctuated by pockets of gooey melted chocolate chunks and rounded out by the tart, tangy fruitiness of raspberries.

Comfort Baking Co.’s suggested serving size is one cookie—good luck sticking to a single serving.

What a blend!

I first had the "Bitch Blend" when I visited the Biscuit Bitch in Seattle while on vacation and I thought it was one of the best coffees I'd ever had. I was ecstatic to learn that I could buy the blend and have it shipped all the way to me in NY and it still didn't disappoint! I would recommend this blend to anyone with a love of coffee and that has a pulse!

Out of the tasting notes, the one that dominates is "toast". It's nice and smooth overall.
