Perhaps you’ve been down to Pike Place Market recently and have seen the new MarketFront development, a beautiful multi-floor modern expansion of the historic Pike Place Market with space dedicated to vendors, businesses, and much more. Well, one of the businesses that has found their new home in the MarketFront, in the new Producers Hall, is Honest Biscuits.
Honest Biscuits is not new to Seattle, but the new location in the brand-new MarketFront development is an enviable new chapter for the business. Producers Hall matches industrial chic with an enormous glass façade that opens directly overlooking Elliot Bay.
Honest Biscuits was founded by Art Stone who was first introduced to the art of making biscuits by his grandmother. And since those lessons in the kitchen in North Carolina, Stone has brought his love of biscuits to Seattle, putting a premium on the freshest local ingredients and fresh new ideas for an old country favorite.
Honest Biscuits offers many flavors of biscuits, including their flagship Butterhole biscuit, the MacGregor biscuit, which is packed with Bavarian Meats bacon, Beecher’s cheese, and caramelized onions, and appropriately, the Pike Place biscuit, which is also infused with Beecher’s cheese. Honest Biscuits also offers seasonal biscuits highlighting seasonal local ingredients and gluten-free and vegan biscuit options.
And of course Honest Biscuits has delicious house-made gravies for their biscuits, including a classic sausage gravy made with Uli’s sausage from Bavarian Meats in Pike Place Market and a gluten-free and vegan gravy made with locally sourced lentils.
And Honest Biscuits not only offers traditional and gluten-free and vegan biscuits and gravy but signature biscuit sandwiches as well. These sandwiches include familiar compositions, such as egg and cheese, sausage, egg, and cheese, and bacon, lettuce, and tomato, but there is another signature sandwich a bit more signature than the rest: the oven “fried” chicken sandwich.
Honest Biscuits’ oven “fried” chicken sandwich (traditional fried chicken to be available soon) is a true southern-inspired culinary treat. The sandwich starts with a Honest Biscuits’ Butterhole biscuit, for which you may sub any other biscuit that takes your fancy. The biscuit is spread with Pike Brewing Stout mustard and piled with pickled red onions and arugula, and the crowning component is an oven “fried” boneless chicken breast. It should also be mentioned, this sandwich can be slathered in your choice of Honest Biscuit gravies.
But Honest Biscuits will not simply stick to serving out delicious fresh-baked biscuits from their new digs in the new MarketFront. To keep their finger on the pulse of Seattle’s locally sourced ingredients and to bring comfort eats to the masses, Honest Biscuits is regularly present at many farmers markets around Seattle, including the Columbia City, South Lake Union, University District, and West Seattle farmers markets, as well as the new market on the Amazon main campus.
